Summer lunches usually end up looking more like a mish-mash of snack foods and leftovers thrown on a plate – but I’m not complaining. I love snacking throughout the day and I find nothing wrong with this eating. As long as I have some fresh fruits and veggies on hand, I’m good! But, sometimes I do get bored of the same old snacks so I am always on the lookout for something delicious. And I found it.
When I was at my mom’s house in Texas I was flipping through a few of her cookbooks and came across the Magnolia recipe for Prosciutto Wrapped Apples. I think it’s a stretch to call this a recipe – it’s more like a technique, but whatever! I like the idea of putting together meat, cheese, and fruit all in one handy little bite. And- how perfect would this be for a quick summer lunch?!?! I had to try it.
I decided to use some of my favorites for this treat and of course, I totally forgot the arugula! I guess we all can’t be Joanna Gaines… I used a Honeycrisp apple for this snack and my all-time favorite cheese… Unexpected Cheddar. If you haven’t tried it by now, you are really missing out. I used a full slice of prosciutto around each apple at first, but I think it was just too much meat – so I scaled it back to 1/2 slice and I think the ratio of all the ingredients was perfect this way.
Drizzled with the balsamic glaze, this was the perfect mix of savory, salty, sweet, tart, and amazing! I loved this as a quick lunch, but it would be equally as amazing as an appetizer. Just don’t forget the arugula – it makes everything look prettier!
