Have you ever taken a recipe off of your rotation – let it slip away into the unknown – and completely forget all about it??? I was talking with my mother-in-law the other night and we were reminiscing about my early married days when I could barely cook. She brought up my one solid recipe that I could make, Honey Glazed Chicken, and instantly I remembered one of my favorite recipes that I had forgotten about! This chicken dish was my go-to in the early years, and I guess I grew tired of it… and then forgot all about it! I instantly made the decision to put it on the dinner rotation (and I am so happy I did!)
As I mentioned, I used to be a terrible cook. Greg, bless his heart, used to eat whatever I made, but that does not mean he enjoyed it! Thankfully, over the years I have improved greatly! This chicken recipe is so simple and nearly impossible to mess up. It works great for the beginner cook – or for someone who wants to throw together a very flavorful weeknight dinner. I have no clue where I got the original recipe, so if this is yours, I never meant to steal it!
Honey Glazed Chicken
1/2 cup flour
1 tbsp salt
1/2 tsp cayenne pepper
4 pieces chicken
1/4 cup packed brown sugar
1/4 cup honey
1/4 cup butter (divided)
1/4 cup lemon juice
1 tbsp soy sauce
1 1/2 tsp curry powder
In a bag combine flour, salt, cayenne pepper. Add chicken and shake to coat.
Pour 2 tbsp butter into baking dish and add chicken turning once during baking. Bake at 350 for 30 minutes. Combine remaining ingredients and pour over chicken.
Bake for 30 more minutes basting several times with pan drippings.
The sauce makes the chicken sweet and a tiny bit spicy… and the curry powder makes it so delicious! I love to serve this over rice – it’s a perfect dish!
