I love a good Brussels Sprout and my favorite go-to recipe is laden with goat cheese and walnuts and bacon and cranberries. It is good, but it is practically a meal itself!
The other day I was looking for a lighter Brussels Sprout recipe that I could hopefully use my grill to cook them up on. I love grilling veggies in the summer and I usually pair that with some nice garlic bread and call it a day! So, I decided to search up grilled Brussels Sprouts on Pinterest and discovered this amazing recipe from The Mediterranean Dish.

This recipe was ridiculously easy and the flavors were spot on. Basically, you pre-cook the sprouts until they are tender enough to skewer, marinate them in a mix of olive oil, lemon juice, garlic, salt, and pepper, and then grill until caramelized! It was that simple!

Once marinated and skewered, I placed my kabobs on the grill for about 4 minutes per side. I had teeny-tiny little Brussels Sprouts, so I imagine if they were bigger you would want to grill them longer. When I bit into my first one… I was so happy! They were tangy and crispy and everything that you want your veggie side dish to be!

This recipe will be on heavy rotation this summer!
