Ebelskivers

If you’ve had an ebelskiver, you know how delightful these little Danish pancakes can be. I had my first ebelskiver in Solvang, CA the cutest little Danish town in America! These are sold in every cafe there…dusted in powdered sugar and filled with berry jam…just thinking about them makes my mouth water!

After our Solvang experience as a kid, my mom bought an ebelskiver pan and made them for us in our own home. I remember them as a special occasion thing…especially on New Years. These breakfast treats do take some time, but they are worth it!

When I moved out and had a family of my own, my mom bought me my own ebelskiver pan. Knowing how to make the ebelskivers from watching her, I was a pro at filling and flipping the pancake. But, for those who never watched their own mom make them, I found a tutorial and recipe here to help you out!

Yes, they take a bit of time, but once you get into the routine it is very zen-like. Pop on a podcast and have a cup of coffee and your time in front of the stove will fly by. I love surprising Tay with these…they might be her favorite breakfast of all time! It’s a fun tradition that’s been passed down in my family that I hope will keep going.
