Maple Oatmeal Scones

My parents were in town for a few days recently and I wanted to make something easy to grab for breakfast and simple to prep. After flipping through a few cookbooks, I remembered one of my favorite recipes from Ina Garten- The Barefoot Contessa: Maple Oatmeal Scones.

I want to start by saying that the recipe makes A LOT of scones. They freeze up nicely, so if you have the space- go for it! I made a half batch for when my parents visited and I came away with 11 good sized scones.

I started the scones the day before I was going to serve them for breakfast. I didn’t want to make too much noise in the kitchen putting together the scone dough in the morning, so I figured if I prepped the scone to the point of baking the day before, stored them in the fridge, then baked them off in the morning, that would work. And guess what- it did! All I had to do in the morning was pull them out of the fridge while the oven was pre-heating, bake them, and glaze them! Super easy!!

The scones were a huge success and everyone loved them. We had enough for me to send some home with my parents for them to enjoy another day, and I even froze one for myself – a nice little treat down the road!
