Lemon Spaghetti

Ahhh- pantry staples! In this time of trying to go to the store less (and have less contact with humans!) I am looking for meals that use a lot of staples, peppered with fresh ingredients, that I don’t always have to be running to the store for. In my quest to rediscover some cookbooks of mine, I found a perfect pantry staple dinner- Giada’s Lemon Spaghetti.

This dinner was so flavorful, so simple, and so downright delicious- I feel cheated that I didn’t realize this recipe was out there sooner! Basically you cook some spaghetti and then make a super-simple sauce with lemon and Parmesan. Throw in some fresh basil (dried would work, too!) and you got yourself a dinner! The key to this creamy sauce is…wait for it…the pasta water! You use the reserve water from cooking the pasta to create a starchy sauce that melds everything together- and it’s delicious!

This quick dinner is faster than takeout and chances are you have all the ingredients on hand. This one is definitely going into the dinner rotation!
