
I hate feeling deprived- doesn’t everyone? I think that’s why dieting seems to never stick, because deprivation does not work for me. Nothing tastes as good as skinny…Yeah, no! I can tell you a million things that taste better than skinny, and pasta is one of them!
Being vegetarian, pasta is a pretty big part of our diet. The amount of carbs and calories in pasta is ridiculous. My favorite pasta substitute is hands-down, spaghetti squash. It looks like spaghetti and, to me, the flavor is whatever sauce you top it with! I love how quick and easy this substitute is.
I always microwave my squash before I put it in the oven. My biggest fear is slicing off a finger while trying to cut open a squash. The thick skin is nothing to mess with! Once I microwave it for a few minutes, I find that the squash is softened enough to cut through without fear of losing a finger. After I cut it open, I scoop out the seeds, and sprinkles some garlic olive oil, salt, and pepper on top.
The hard part is over – can you believe it! Seriously, the rest is so easy! When I made this, I pulled it from the oven (450 degrees for 15 minutes) and then let it cool on the counter while I went to yoga. When I came back all I had to do was scrap the cooked squash into a bowl and top it with my favorite sauce (marinara with meatless meatballs from Trader Joe’s)

Now, you will have to forgive me – I was planning on taking a nice picture of my beautiful plate of “pasta” before devouring it…but, I was hungry! So, when I packed up the leftovers for my lunch the next day, I convinced myself I would take a photo before eating it…but that didn’t happen!

But, isn’t this a perfect advertisement for how good this dish is? It was so good I forgot to take a photo not one but two times because all I could think about was eating this delicious meal!
