Brownies- two ways

I love baking up incredible treats for my family and friends- and I pride myself on homemade everything! But, I am human and sometimes that just doesn’t work out. This past week I was tasked with making an incredible dessert for a friend’s (socially-distanced) small birthday get-together and I ran out of time and energy to be overall creative. So, I bit the bullet and made brownies…but, with a homemade twist!

When making anything store bought, you obviously want to go with the best of the best. The Ghirardelli brownie mix is the best- in my opinion- and it’s nearly impossible to mess it up. I knew I wanted to make fancy brownies and these were going to be the perfect base.

Quick tip- I have always found it to be essential to line your baking pans with parchment paper and then spray with cooking spray when making any sort of brownie and bar cookie. This way, you can pull the sweet treats out of the pan easily after they have cooked and cut them beautifully!

I wanted to make a cheesecake brownie (my favorite!) and then decided to go with a peanut butter brownie, too. I looked online for recipes I could plunder for both the cheesecake filling and the peanut butter filling and was super happy with the ones I found. They were simple to make and tasted amazing. And, no joke, look at the beautiful swirl on them!!!! It’s mesmerizing!!

Bonus: I used up two peanut butter jars that just had a little bit left in them…so the pups had a nice treat, too!!!

I was so ridiculously happy with the way my fancy brownies came out, and they took minimal effort! The addition of just one small step elevated an everyday box mix to something truly special.
