
Ahhh- butter lettuce! Amongst all the different kinds of leafy greens there are, this one has to be my favorite. Romaine is the workhorse of lettuce- carrying the hearty toppings and always there when you need it. Spinach is a nice change when you want something darker and, in my opinion, fancier. But butter lettuce…it’s delicate and special, and comes with its roots still attached…I love it! And I love how versatile it is! Cut it up for a salad or, in this case, use it as a wrap!!
Asian lettuce wraps are incredible – and where butter lettuce can really shine. My favorite have long been P.F. Chang’s wraps because they are crunchy and salty and savory…so amazing! So, when I got butter lettuce in my CSA box last week, I knew I wanted to try and copy the lettuce wrap I know and love!

Most lettuce wraps call for ground chicken, but wanting to keep these vegetarian, I substituted ground Beyond Beef for the chicken. The texture is exactly the same and it cooked up perfectly. I scoured Pinterest for some different sauce recipes and finally settles on this one, from Savory Bites Recipes. I had all of the ingredients in my pantry and it was easy enough to switch out the vegetables in the wrap with what I had on hand.
I paired the wraps with some white rice and vegetable egg rolls and it was a perfect dinner. The lettuce wraps were so good and I was thrilled with the flavors! And the beat news…they were even better reheated they next day!!!
