Lemony Lemon Bread

Back to school means back to quick breakfasts and snacks! My family has been doing the school thing the last week, and one thing for sure is that when everyone walks in the door after a long day, they want something quick to munch on. Tay and Greg have been going at the Costco muffins (who doesn’t love them?!) but I thought I could make a sweet treat that is definitely less processed and hopefully fewer calories!

My dear friend Meghan bought me the Family Meals cookbook years ago and I have generally loved everything I have made from it. I pulled it down from the shelf as I was looking for inspiration and I found tons! The first recipe I wanted to tackle- the Lemony Lemon Bread.

This recipe is by no means difficult, and it was quick and easy to whip up early Saturday morning. The bake time, in total, was about 60 minutes, and the hardest thing for me was to wait that long to eat it! My entire kitchen smelled like lemony baked goods and my tummy was growling!

After letting it cool for about 30 minutes I finally got to taste it- and it was phenomenal! The lemon was not overpowering but instead gave the bread a fresh note. It also cuts through the sweetness- which was perfect for me. I think I’ll use this bread base for other flavors of quick breads considering how light and fluffy it came out!
