Lemon Bars

I thought this Monday called for a little something sweet! My amazing neighbors (Tim & Ellen – I’m talking about you!) have access to some of the best lemons in the world. They are HUGE and tasty and everything a good lemon should be! Recently, a large bag of lemons was left on my front porch, so, what do you do when life gives you lemons??? Make lemon bars!

I found my lemon bar recipe where I find most of my favorite baked goods recipes – at Brown Eyed Baker. The thing I love about lemon bars – they are so dang easy! Also, they are one of the only desserts I actually truly like. I’m like my Grandma in that respect. She loved the lemon bars – must be a Jane thing (we both have the same middle name!)

Like every Lemon Bar recipe, you first make the crust and then the filling. I have to say, it was super easy to do with the Cuisinart Food Processor (for the crust) and the Cuisinart Juicer (for the filling.) My kitchen appliances really got a work-out this recipe!!!

Perfection – honestly that’s what these bars were. Not too sweet but totally tangy and buttery and delicious!
