Quick Breakfast – Oatmeal

Just a little reminder – oatmeal does not have to taste terrible! Trying to cut out the extra calories and sugar is difficult – especially if you like food. Or love it. Like me. I needed a fast breakfast that would fuel me for a workout. I knew oatmeal was the logical choice but I WAS SO OVER OATMEAL! I stood in front of the fridge for a looooooong time and finally came up with a twist on peanut butter and jelly.

I made the stovetop traditional oatmeal (with almond milk instead of water to make it a bit creamier) and then I mixed in a heaping tablespoon of almond butter. I mixed that around and then sliced up a huge handful of strawberries and scattered them on top.

Result- amazing oatmeal! It was so good!!!! Using my calorie counter I tracked it at just over 400 calories and it powered me through a hike with the family and kept me full for hours!
