
Lemons are perfection. They can be sweetened in desserts or used in savory dishes. They are tart, exciting, and they always remind me of warm weather. I think one of my favorite flavors in the whole wide world is that of a lemon.
So, with that in mind, I knew I wanted to do some sort of lemon treat to welcome the new teachers to our school. One of the best parts of my job is that I am the welcome committee for any teachers that are new to our school. I show them all the important “inside” info that they need to be successful. I meet with them once a month and I always make sure that I have something delicious to serve to thank them for their time.
It’s been so incredibly hot here and heavy baked goods just did not sound appealing. I have never attempted a lemon pudding- nor had I really heard of one- but a quick Pinterest search found me a recipe for exactly what I was looking for!
Turning the Clock Back posted this Lemon Pudding recipe that looked easy and quick. I made up a batch and then put it in little disposable plastic cups for serving. I wanted to do little mason jars, but that would have required a trip to Target and I just didn’t have it in me to do that on a weeknight! After the pudding set-up, I topped it with homemade whipped cream, a blueberry, and a sprig of mint from my garden. Last minute, I included a vanilla pirouette cookie because, why not?!?

The finished pudding was one of the cutest desserts I have ever made and it TASTED FANTASTIC! It was refreshing and delicious and the perfect amount of lemon. I am seriously staring at the pictures right now wishing I had more to eat!!! This dessert would be ideal for dinner parties, picnics, or a random Wednesday night!
