Blueberry Lemon Cheesecake Bars

I love cheesecake in all its different forms. I think this is a perfect dessert to entertain with because I don’t think I have ever met a person who doesn’t like cheesecake (or at least tolerate it!) Also, cheesecake is a fabulous dessert you an make ahead of time and it is served cold – all perfect for entertaining!

I wanted to find a new cheesecake dessert to make that had spring-y flavors. I went to Half-Baked Harvest (my go-to!) and found the prettiest cheesecake dessert – Blueberry Lemon Cheesecake Bars. I served these bars at a recent dinner party and I was so happy with how they looked and how they tasted.

The secret to these bars is blueberry jam. I found the jam at my local grocery store and it got me thinking, that you could probably substitute strawberry, raspberry, or even blackberry jam in this dessert if you wanted to try a different flavor profile. I was actually thinking that raspberry lemon would be super delicious!

These bars are anchored by a buttery graham cracker crust and topped with a layer of blueberry lemon cheesecake filling, and finally swirled with just a lemon cheesecake filling. The final step is to sprinkle fresh blueberries on the top and bake.

I kept these in the fridge (after they cooled) overnight and cut them into bars right before serving. This was such a hassle-free dessert that was a perfect end to our dinner!
