
When we went to Panino in Los Olivos a few weeks ago, I branched out and tried a new sandwich – The Curry Chicken Salad. This turned out to be an amazing choice… it was fantastic! Back home, I dreamed of this goodness, so I began searching for a curry chicken salad recipe to try.

I typically do not like mayonnaise too much, so I knew I wanted a recipe that had little to no mayo in it. Low-and-behold, I found a Greek yogurt Curry Chicken Salad recipe, made for me! Everything in this salad spoke to me… the grapes, cashews, celery, and green onions are all things I love and I knew it would work well with the curry. I couldn’t wait to try it.

This recipe came together so easily. I made a huge batch on Sunday afternoon for lunches all week – and it was such a good life choice! I baked the chicken in the oven and then shredded it in my KitchenAid mixer; which I liked better than cubing the chicken. After chopping up the rest of the ingredients and mixing together the dressing, it went into the fridge to let the flavors combine!
I ate this chicken salad in a sandwich, on crackers, and just by itself. All ways – it was fantastic!
