Lemon Butter Dijon Chicken and Orzo with Feta Sauce

This dish has the longest recipe title – but one of the easiest preps I have had in a long time!

If you haven’t realized it by now, I love Half Baked Harvest! Tieghan, the mastermind behind this food empire, puts together amazing recipes that excite me. She has a way of combining simple ingredients to make amazing meals, and this is something I just need in my life. I follow her on IG and love her daily posts.

Recently, Tieghan posted this chicken dish and I was immediately intrigued. All of the flavors are things I love and I had never thought of something like a feta sauce… I mean, what!?!? So, on a recent Saturday night I went about recreating this delicious dish.

The first thing I love about this dish – it is one pot! It is such a wonderful gift to make a full meal in a single pot! after quickly browning the chicken and spices (and the lemon, too!) you simply add the broth, orzo, and kale and place the entire pot in the oven to cook.

While the dinner is cooking, I made the feta sauce which took no time at all. This sauce was so flavorful and I think it would be awesome to use as a dip for veggies in the future. If you love feta- which I do- this is a sauce to keep on hand.

The final dinner was fast, easy, and delicious! I think I may substitute spinach instead of the kale next time because I just like the flavor of spinach better… or leave it out all together! Overall this would be a perfect weeknight dinner or dinner for company!
