Gluten Free Chocolate Chip Cheesecake

Obviously I love baking, and I have pretty much become the dessert-maker for my friends, too! Recently, my friend, Jill, asked me to concoct a gluten free cheesecake for a dinner she was hosting and I was more than happy to oblige.

I went with a chocolate chip cheesecake because, who doesn’t like a chocolate chip cheesecake? In order to make it gluten free, I used these yummy almond flour chocolate cookies from Whole Foods as the crust. They have the perfect consistency for a cookie crust and I really like the flavor of them.

The cheesecake itself is naturally gluten free, so there was no altering the recipe here. I decided to use the recipe from Confessions of a Baking Queen because it was a simple, straight-forward cheesecake recipe. I always use the mini chocolate chips when making something like a cheesecake because I love the smaller little pops of chocolate mixed in. You could use the larger chocolate chips, but there is something about the smaller chips that I love it reminds me of confetti!

The finished cake was topped with hot fudge and homemade whipped cream, and Jill said that it was a huge success. See -everyone really does like Chocolate Chip Cheesecake!
