I have never made a whoopie pie in my life… hell, I don’t think I have ever even eaten one! But, when I was looking for a fun fall treat to make for my monthly department meeting, a whoopie pie sounded like what everyone needed!
I usually fall back on Sally’s Baking Addiction when it comes to baking recipes. I love how every single one of her recipes comes out flawless. When I am trying something new, I don’t want surprises. The Apple Spice Whoopie Pies were a recipe that was not super simple, but one I knew I could tackle. I appreciated how there were different steps to the recipe that I could do over a couple of days, making this perfect for a mid-week treat.
I started by making the cookie part of the pie. These cookies are super soft and super flavorful – the batter instantly smelled like apple pie! The use of reduced apple cider and applesauce really intensified the apple flavor and the spices were perfect.
A day after I made the cookies, I assembled them with the frosting. This intensely spiced frosting was easy to make, and I piped it into the cookies with no problem, making adorable little sandwiches. The recipe suggests doing this the day before serving, so the flavors can meld, and that is exactly what I did!
The finished product was delicious and oh-so-cute! I loved serving my department little sandwich cookies that packed a fall flavor-punch!
