
Pasta is my love language. Or cheese. Or wine. Ok, I can’t really decide what my love language is, but pasta is certainly up there! A good (easy) pasta recipe is a perfect way to bring the family together at the end of the night and I couldn’t think of a better one than Half Baked Harvest’s Cherry Tomato Pasta Alla Vodka.
This amazing and super simple pasta celebrates the consummate summer tomato and highlights them in a creamy sauce that is so flavorful… my mouth is watering just thinking about it. The whole dish came together in the time it took to boil the pasta and it is so far superior to a canned pasta sauce – you can’t even compare the two!

Of course, with my family of picky eaters, I did change up the recipe a bit to make it something that everyone would eat. I omitted the chili flakes and I ended up pureeing the entire sauce instead of just half of it, to get rid of any chunks. I have had chunk-less vodka sauces before and I loved them, so I didn’t think it was actually all that strange.

The final product was heaven!!!! Seriously – the house smelled all garlicky and amazing, the sauce was creamy and flavorful, and my belly was so full! Paired with a salad and some garlic bread, you couldn’t ask for a more perfect meal!
