Pumpkin Ravioli

I love the fall flavors- as evident by Thanksgiving dinner being my FAVORITE meal of the season! The stuffing, the creamed corn, the cranberry sauce…it’s just all so good! So, anytime I see something that has a fall-flavor theme to it, I give it a shot. Enter Trader Joe’s… and these amazing pumpkin ravioli.

When I saw these at the store, I knew I wanted to make them- I just didn’t know exactly what to pair them with. So, right there in the middle of my local TJ’s I jumped on the internet and googled “pumpkin ravioli.” A few photos later (yes, I choose recipes by the photos!) I found this amazing dish, Pumpkin Ravioli with Brown Butter Sauce.

I loved this recipe because it called for brown butter (amazing!), sage, and toasted walnuts. I thought the walnuts was a nice twist and the flavors came together so nicely. The sauce itself was ridiculously easy to make, and it all cooked up in the time it took to cook the pasta…otherwise known as super fast!

I paired the pasta dish with an amazing fall salad of goat cheese, pistachios, pomegranate seeds, and Asian pear. Topped with a bit of homemade dressing…it was so good!

The final pumpkin ravioli was perfection. It had all the comfort of fall flavors but in a fun little pasta wrapper! It was an easy weeknight meal that really felt like the season. šŸ
