I love social media for a number of reasons, but one is for the silent stalking you can do of interesting people without anyone else knowing. No- I swear I’m not a creeper, but there are times that I can pick up so much by just observing!
I follow this one woman online who lives in my general vicinity and I found her in the random searches because we have a lot of things in common and follow the same pages. She has fabulous taste when it comes to recipes, so I often find myself wanting to make the meals she posts.
Just a few weeks ago she posted a recipe from Pinch of Yum for Barbecue Tofu. I am always looking for ways to make tofu better than the last recipe, and this one was it. It was so simple, but full of all the flavors I love.
While the recipe tells you how to season the tofu, she just gives you suggestions on how to serve it. I decided to make rice bowls with tofu, sweet potatoes, beans, corn, and topped with barbecue and ranch. This was an ideal meal coming off of a double workout and I couldn’t wait to try it.
This tofu was OFF THE HOOK!!! It was so flavorful and crunchy and delicious. The bowls were perfection. They hit the spot and tasted wonderful. They filled both Greg and me up without I’m feeling weighed down. I loved everything about this meal. The tofu would be good in about 100 different things…salads, wraps…the possibilities are endless!
