I know, taco salad seems so basic! It’s the meal you make when you have a bunch of random things in the fridge and you aren’t sure what to do with them. Taco salad can be simple, but it certainly does not need to be basic! The other night, we had friends over for dinner and I needed something that would be quick, easy, yet delicious for all the picky eaters in my life. My solution – the greatest salad of all time!
Let’s start with the snacks. When company comes calling, you must always put out snacks! I find that if there is a little something to nibble on before dinner, it takes the pressure out of you as the host to have food ready at the exact right moment. I put out the best snacks ever – chips, salsa, and guacamole. Seriously, very few things compare!
My taco salads lately have started with this – Trader Joe’s Soy Chorizo. This gift from the gods is so amazing and tasty, that even meat eaters love it. Plus, it takes just a few minutes to cook up and it’s ready to go! The flavor is spiced but not spicy, making it a perfect addition to my family’s meals!
I have been searching for the best taco salad dressing recipe, and I think I finally found it on Carlsbad Cravings Blog. This dressing is creamy, tangy, and seriously the best dressing for taco salad that I’ve ever had! (The recipe for the grilled chicken that she serves with this salad also looks amazing- if you are a meat eater!!!) I made this dressing earlier in the day and left it in the fridge for all the flavors to marinade. When it was time to eat dinner – it was perfect.
The finished salad was an explosion of flavors. It included: romaine lettuce, carrots, fresh corn, black beans, avocado, shredded cheese, soy chorizo, the amazing dressing, and topped with crumbled tortilla chips. This dinner makes me so incredibly happy – and there were leftovers which meant my lunch the next day was really something to look forward to!
