
I’m embarrassed to admit, but more nights than not lately I’ve felt pressed for time when it comes to dinner. I remember- years ago- when Greg would be blessed with a full three course dinner almost every night that had a perfect proportion of protein to meat to carbs. Yeah, life has gotten in the way!
I discovered these little gems a few years ago at Trader Joe’s. I love polenta- having always eaten it in a restaurant- and didn’t really know what to do with a tube of it! After some trial and error, I have found that the tube of polenta at Trader Joe’s is a perfect base for…anything!
Last week I found that I was super short on time, it was too late even for takeout! So, I reached into the pantry and made the simplest of simple dinners- and it took literally 15 minutes! I topped some rounds of polenta (just slice it!) with pizza sauce and cheese and suddenly I had Mini Polenta Pizzas! Stick them in a 450 degree oven for 15 minutes and you get the most luscious, delicious, little bites
While they cooked I whipped up a simple salad and dinner was complete. Difficult- not at all. While this is certainly not gourmet, it nourished us and it tasted good!!!! As a working mom- what more could you ask for?
