Easy Veggie Dinner

Most of the time, I am pretty dang proud of the dinners I put together. They are well thought out, hit all the food groups, they just go well together. Sometimes, I am just too tired to work through all the intricacies of a perfect dinner. For those nights, I have come up with an easy to make, healthy and very green dinner! Honestly, I didn’t realize until I plated it this last time, just how green the plate looks all finished! I guess it could be worse…

I start with my Brussels. I love them – I really do! I love them even more that Trader Joe’s makes a shaved Brussels Sprouts that cook up so freakin’ fast! Basically I mix them with some olive oil, salt and pepper, lay them flat on a baking sheet and roast then at 450 degrees for about 15 minutes. At that point – you top them. I love mine with the delectable combo of balsamic, feta cheese, and pistachios. Don’t question the combo, trust me. The mix of tangy, salty, and crunchy is perfection. After topping them I stick them back in the oven for 5 minutes and they are ready to consume. And I could easily consume the entire tray!

Now, the spinach. Don’t you love how a huge bag of spinach cooks down to like 2 tablespoons??? I cook my spinach in a bit of garlic infused olive oil and within 2 minutes I get the green goodness as an easy side dish. I love my spinach topped with sautĂ©ed onions, while Greg, is much more of a purist. I hate to inform him, but he is totally wrong. The onions with the spinach is so good – the poor boy doesn’t know what he’s missing out on!

The star of this simple dinner is none other than Pesto Polenta. Once again, Trader Joe’s is my savior. They have these rolls of polenta that you just cut into 1/2 inch rounds, top them with some of this delicious pesto with quinoa, and a sprinkle of parmesan. Broil them in the oven for five minutes – and done. IT IS THAT SIMPLE!!!

Throw a breadstick with it (yes, the Trader Joe’s garlic cheese one!) and call it a day. This green goodness dinner takes about 20 minutes, is so amazing, and you get like 3,000% of your green veggie goodness for the day! And you get crispy, crunchy amazing Brussels Sprouts… what could be better????
